LAZY PIEROGI 
1 lb. dry cottage cheese or ricotta
2 eggs, slightly beaten
1 egg yolk
1 tsp. salt
1 tbsp. melted butter
1 1/2 c. sifted flour

Put cheese through a food mill; combine it with eggs, salt and butter; then work in the flour. Toss dough onto a floured board and form into a roll 1 1/2" thick. Cut diagonally into 2" pieces. Drop into boiling, salted water and cook for about 5 minutes. Just before serving, saute dumplings in melted butter and serve topped with sour cream or pieces of fried crisp bacon. Serves 8.
