PAN ROASTED CHICKEN WITH GARLIC | |
2 tsp. minced garlic 6 tbsp. Worcestershire 6 tbsp. fresh lemon juice 1/2 c. water 1/4 c. minced fresh parsley 1/4 c. melted butter 3/4 tsp. freshly ground pepper Pinch of cayenne 4 chicken breast halves, skinned and boned 1 loaf French bread (optional) Heat oven to 375 degrees. In medium baking pan, mix garlic, Worcestershire, lemon juice, water, 2 tablespoons parsley, butter, pepper and cayenne. Crosshatch smooth side of chicken with 1/4 inch deep cuts so it absorbs more sauce. Place scored side down in pan. Add sauce and stir to coat. Bake 20 minutes uncovered. Stir remaining parsley into sauce. Pass remaining sauce. Good with French bread or herbed rice pilaf or baked potatoes and Greek salad. Serves 4. |
