BROCCOLI-CHEESE SOUP 
3 cans cream of potato soup, undiluted
2 cans chicken broth
1 lg. onion, chopped
3 med. carrots, grated
1 lb. Velveeta cheese
1 pkg. frozen broccoli pieces (may use fresh broccoli), pre-cook and drain
3/4 stick butter

Saute onion and carrots in butter. Add potato soup and broth. Blend in well. Heat on low heat. Add cheese that has been cubed. Stir constantly. Add pre-cooked broccoli, blend well. Season to taste. Serves 8-9.
