2 eggs
1 c. sugar
3 tbsp. oil
1 c. applesauce
1 c. milk
4 c. flour
4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg if desired

Mix eggs, sugar, oil, applesauce and milk. Add remaining ingredients. Using teaspoons (2), use one to scoop up heaping full of dough and the other spoon to scrape off into hot oil. When dough floats to top turn them to brown on both sides.
