MARINATED MUSHROOMS 
1 lb. fresh mushrooms (1/4 if lg.)
1/3 c. red wine vinegar
2/3 c. oil
1 tsp. chopped parsley
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. sugar
1 tbsp. lemon juice
3 garlic cloves, cut in half

Wash, clean and quarter mushrooms if large ones are used. Mix all ingredients in a jar or Tupperware so you can toss every few hours. These are better 3 days later. Serves 4 to 6.
