FROZEN CHOCOLATE BANANAS 
1/2 oz. unsalted roasted peanuts, chopped
1 oz. semi-sweet chocolate chips
1 med. banana, peeled & cut in half crosswise

Line freezer safe dish with wax paper, set aside. On separate sheet of wax paper or a paper plate spread nuts, set aside.

In 10 ounce microwave-safe custard cup melt chocolate chips on medium (50% power) until chips are softened, 30 seconds to 1 minute, stir with small metal spatula or butter knife until smooth. Add 1 banana half to chocolate and turn to coat, roll in nuts and set on prepared dish. Repeat procedure with remaining banana half, chocolate and nuts.

Freeze until chocolate hardens, about 1 hour. Serve immediately or wrap individually in plastic wrap and store in freezer for up to 1 week.

Since microwave ovens vary in power, you may need to adjust your cooking time.
