RED & GREEN SAUTE 
1 tbsp. olive oil
2 tbsp. grated fresh ginger
16 oz. frozen sugar snap peas
1 lg. sweet red pepper, cut into 3 x 1/4 inch strips
1/2 tsp. salt
1/4 tsp. black pepper

Heat oil in a large skillet over medium heat. Add the ginger; saute, stirring constantly, for 15 seconds. Add the peas; saute stirring constantly for about 2 minutes. Add the red pepper; saute, stirring constantly for about 2 minutes. Stir in salt and pepper. Makes 4 servings. Dietetic and very pretty! (Especially nice for Christmas!)
