CAESAR SALAD 
2 cloves garlic (med.) or 1 lg.
1 can flat fillets of anchovies
1 ripe lemon
1 egg
Grey Poupon Dijon mustard
Worcestershire sauce
Grated Parmesan cheese
Red wine vinegar
Salad oil
Onion and garlic croutons
Romaine lettuce (must be cold and crisp)

While creating this fabulous salad, one should have one's favorite beverage at hand.

Coddle 1 medium to large egg. Clean lettuce in ICE COLD water. Cut lettuce into 4 inch pieces and let drain in colander (refrigerate to crisp). Do not use tips of outside leaves, they are sometimes bitter.

Drain oil from can of anchovies. Peel garlic cloves. Cut up cloves, place in garlic press and shred into wooden salad bowl. Remove anchovies from can and clean thoroughly. Select 3 or 4 medium-size anchovies; place in garlic press and squeeze into salad bowl. Cut remaining anchovies into 3/4-inch pieces and place aside in small bowl.

"Season" salad bowl bottom with ground garlic and anchovies (blend along bottom of bowl with a fork). Add lemon juice to anchovies and garlic blend on bottom of salad bowl; blend well. Add 2 heaping teaspoons of mustard.

Add a dash of Worcestershire sauce; blend well into bottom of bowl. Add coddled egg into blended ingredients in bowl. "Scramble" and break up egg white and yolk; blend well. Add a layer (coating) of Parmesan cheese on all mixed ingredients on bottom of salad bowl.

Add 1 to 1 1/2 teaspoons of wine vinegar. Add 1/2 to 2/3 cup oil to blended ingredients. Blend vigorously until all ingredients are smooth. Dump all but thin coating of mix into a soup bowl. Place salad bowl with thin coating in refrigerator. Coat extra anchovies (those put aside earlier) with blended mix and refrigerate also.

After all ingredients have been cooled, place the cut up Romaine into the salad bowl. Place the croutons on top and add the Caesar salad mix. Mix so that all Romaine leaves have a coating of the dressing. Serve in a broad flat salad bowl and for those who like anchovies, add the pieces to the top of the individual salad bowl.

I make this salad to taste and very rarely do I measure anything. If you like one ingredient more than another, you can increase or decrease to your own taste. Enjoy!
