BASIC BOILED RICE | |
4 qts. water 1 tbsp. salt 1 1/3 c. raw rice In a heavy saucepan bring water and salt to a rolling boil. Sprinkle in rice, stir and reduce heat. Cook over moderate heat for about 18 minutes. Drain rice in colander and rinse under running cold water. Put the colander over a pan of boiling water making sure water level does not touch bottom of colander. Cover rice with a lid and steam for 15 to 20 minutes. Serve. BASIC BOILED RICE, COVERED: 1 c. raw rice 1 1/2 c. water 1 tsp. salt Combine ingredients in saucepan and bring to a boil. Cover. Reduce heat to low and cook for 23 minutes without removing lid. Remove pan from heat and let stand for 5 minutes. fluff with a fork. Serves 4. BASIC WILD RICE: 1 c. wild rice 6 c. water 1 tsp. salt Wash rice several t times. Drain. In heavy saucepan bring water, salt and rice to a boil, covered. Uncover and boil for 50 minutes. Drain. To fluff rice further, steam in a colander. Serves 4. |
