PASTA FAGIOLI 
(Pasta with beans)

4 tbsp. of olive oil
2 cloves minced garlic
1 med. onion, chopped
1 lg. rib celery, chopped
1 carrot, chopped
1/4 c. water
1/2 c. tomatoes
1 can cannelloni beans (white)
1/2 can water
1 tsp. salt
1 tbsp. parsley
Black and red crushed pepper (to taste)
Pasta (1/2 c. Ditalini)
Pre-cook pasta (al dente)

Heat oil in pan, adding onion and garlic. Saute' gently until transparent. Add celery and carrots and cook a minute. Add 1/4 cup water and cover, cooking about 5 minutes or until vegetables are softened. Add tomatoes and cook a minute. Then add beans, parsley, salt, pepper and red pepper to taste. Add approximately 1/2 can of water. Bring to a boil and then simmer slowly for approximately 30 minutes. Check for consistency. (May add more water if getting too dry.) Add pasta just before serving and simmer a few minutes. Serve with grated cheese.
