NO FLIP OVEN BAKED APPLE
PANCAKES
 
4 eggs
6 tbsp. all-purpose flour
1 tsp. salt
1 tbsp. granulated sugar
2/3 cup milk
1 tbsp. butter
1 apple, grated
1 tbsp. lemon juice
2 tbsp. confectioners' sugar
jam or preserves, for serving

Preheat oven to 425°F.

Beat eggs; add flour, salt and sugar, sifted together. Beat 5 minutes or more. Add milk; beat 5 minutes longer. Melt butter in skillet. Pour in butter. Sprinkle batter evenly with grated apples.

Bake at 425°F for 8 minutes; reduce heat to 350°F and bake 15 to 18 minutes longer, until pancake is puffed and golden.

Sprinkle with lemon juice and confectioners' sugar. Cut in wedges and serve with jam or preserves.

Makes 6 to 8 servings.
