EASTER EGGS 
1 lb. confectioners sugar, unsifted
2 tbsp. water
2 tbsp. light corn syrup (white Karo)
3 tbsp. butter, softened
1 tsp. vanilla
1/4 tsp. salt
Pinch of cream of tartar
1 1/2 c. coconut

Combine confectioners sugar, water, corn syrup, butter, vanilla, salt and cream of tartar. Mix thoroughly. Mixture will be slightly crumbly. Add coconut mixture until smooth. Shape mixture into one large egg, or two smaller ones, or bite size. Cover eggs with chocolate coating. They can be frozen.
