CHIX DIVAN | |
3 whole chicken breasts, skinned and boned after or before cooking 2 (10 oz.) pkg. frozen broccoli 2 cans cream of chicken soup 1/2 pt. sour cream 1 c. mayonnaise 1 c. shredded sharp cheddar cheese 1 tsp. lemon juice Parmesan cheese Salt and pepper to taste Mushrooms, sliced (small can) Cook chicken, simmer in water with onion, celery, carrot, bay leaf, pepper corns, salt, etc. Cook broccoli and drain. Mix soup, sour cream, mayonnaise, cheese, lemon juice and salt and pepper. Arrange broccoli in bottom of a 3 quart greased casserole pan. Cut or tear chicken in hunks or pieces and spread over broccoli. Sprinkle with Parmesan cheese. Pour sauce over all. Bake 30 to 40 minutes at 350 degrees until hot and bubbly. Can be made ahead and refrigerated or frozen and cooked later. Good with tomato aspic or baked stuffed tomatoes and green salad. |
