APPLE CAKE 
1 1/2 c. sugar
2/3 c. butter
2 eggs
1/2 c. buttermilk (or sour milk)
2 1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 c. hot water
1/2 c. nuts (pecans)
1 c. raisins
2 c. peeled, chopped apples

Cream sugar and butter. Add eggs and milk. Mix soda and cinnamon in hot water and add. Add remaining dry ingredients. Stir in nuts, raisins and apples. Put in a 9 x 13 inch greased and floured pan. Bake at 350 degrees for 45 minutes or until tests done.

CREAM CHEESE FROSTING:

3 oz. cream cheese
4 tbsp. butter
1 c. powdered sugar
1 tsp. vanilla

Mix.
