POACHED FISH 
1 med. onion, sliced
3 slices lemon
3 sprigs parsley
1 bay leaf
1 tsp. salt
2 peppercorns
1 lb. fish fillets

Heat 1 1/2 inches water, the onion, lemon, parsley, bay leaf, salt and peppercorns to boiling in 10 inch skillet; reduce heat. Arrange fish in single layer in skillet. Simmer uncovered until fish flakes easily with fork, 4 to 6 minutes. 5 to 6 servings.
