BLUE CHEESE CRISPS 
8 oz. blue cheese, room temperature
4 oz. unsalted butter, room temperature
1 egg
1 tsp. freshly ground black pepper
1 3/4 c. all-purpose flour
3/4 c. chopped pecans

Cream together cheese and butter. Add remaining ingredients in order given. Shape into rolls 1 1/2 inch diameter, wrap in waxed paper and chill. Slice dough in 1/4 inch rounds and place on ungreased baking sheet. Bake at 425 degrees for about 10 minutes or until lightly browned. Serve with soup, salad or as an appetizer.
