BANANA MAPLE MUFFINS 
1 1/4 c. flour
1 c. oat bran
1/2 c. firmly packed light brown sugar
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped nuts, if desired
1 c. (2 lg.) mashed ripe bananas
1/2 c. plus 1 tbsp. maple syrup
3 tbsp. oil
1 egg, beaten

In medium bowl, combine flour, oat bran, sugar, baking powder, baking soda, cinnamon and salt. Stir in nuts.

In medium bowl, combine bananas, 1/2 cup maple syrup, oil and egg. Add to flour mixture. Stir only until moistened.

Fill muffin cups that have been greased or lined with paper cups 3/4 full. Bake 20 minutes at 400 degrees or until golden brown. Remove from pan. Brush warm muffins with remaining 1 tablespoon maple syrup. Makes about 1 dozen.
