CHICKEN ADOBO 
3 to 4 lb. chicken, cut up in sm. pieces
1 c. water
1/2 c. vinegar (any kind)
3 tbsp. soy sauce
1 med. onion
3 cloves garlic (chopped)
3 bay leaves
1/2 tsp. salt
1/2 tsp. whole black pepper

Wash and cut up chicken, trim off fat and skin. In a medium non-stick saucepan or Dutch oven; arrange the chicken in the pan add all the above ingredients. Bring to a boil; reduce heat to medium-low. Cover and simmer 30 minutes, stirring occasionally. Serve with steamed rice. Enjoy!
