CORNED BEEF SALAD 
1 (3 oz.) pkg. lemon Jello
3/4 c. mayonnaise (I use Miracle Whip light)
1 c. celery, chopped
1 sm. onion, chopped
1 1/2 c. boiling water (no more)
1 can corned beef, shredded (12 oz. can)
1 green pepper (I use both green & red for color)
2 hard boiled eggs (diced)

Dissolve Jello in boiling water. Set aside to cool. Chop or dice vegetables. Dice eggs. Shred corned beef.

Combine all ingredients and chill. (I put mine in a loaf pan to set, nice then to slice to serve on lettuce.) Serve with rolls, muffins, French or sour dough bread and a fruit bowl.
