BLACK BEANS AND RICE 
2 (15 oz.) cans black beans
1/4 c. green pepper, chopped
1/4 c. Cheddar cheese
1 clove garlic
Cooked rice
1/4 c. chopped onion
1 bay leaf
1/4 c. chopped tomato
Olive oil

Saute onion, pepper, and garlic in a little olive oil until onions are transparent. Add bay leaf and beans. Heat thoroughly. Remove bay leaf and serve over rice. Top with more onions and the cheese and tomato. 4 servings.
