PORK FRIED RICE 
Pork cutlets or leftover pork, thin slices
3 c. cold cooked rice
1 sm. can mushrooms
1/4 c. sliced carrot
1/2 c. lettuce, finely chopped
2 green onions
1/3 c. frozen peas, thawed
1/2 c. pork juice from pan add water to make 1/2 c.
2 tbsp. soy sauce
2 tbsp. salad oil
Salt to taste
Pepper to taste
1 tsp. garlic powder
1/4 tsp. ground ginger
2 well beaten eggs

Cook pork in tablespoon oil - drain pork - add water to make 1/2 cup liquid - in wok or large skillet stir fry well mushrooms, vegetables and seasonings. add meat, broth, soy sauce and rice. Stir fry until desired doneness.

In large skillet fry egg, turn and fry, cut into small pieces and add to rice mixture. Stir 1 minute or until hot covered - add 1/2 cup finely chopped lettuce before serving.
