LINGUINE WITH ASPARAGUS, GARLIC
& LEMON
 
1 onion, diced
1-1/2 tsp. minced garlic
2 tbsp. olive oil
2 tbsp. butter
6 oz. dried linguine
1/2 lb. asparagus, sliced diagonally
1 tbsp. lemon juice
1 tbsp. freshly grated Parmesan cheese
salt & pepper

In a heavy skillet, cook onion and garlic in oil and 1 tablespoon of butter over medium heat, stirring until mixture is golden. Season with salt & pepper.

Cook linguine for 10 minutes. Drain.

To the skillet, add asparagus and cook mixture over medium heat, stirring for 5 minutes. Remove skillet from heat and add remaining butter, lemon juice, linguine and Parmesan cheese. Toss well.
