BROCCOLI AND RICE CASSEROLE 
1 tbsp. chopped onion
1 tbsp. butter
1 1/2 c. rice, cooked
salt to taste
1 pkg. frozen broccoli, cooked
1 can mushroom soup
1/2 to 3/4 c. Velveeta cheese, cubed
pepper to taste

Sauté onion in butter. Add rice, broccoli, soup, cheese and salt and pepper to taste. Pour into buttered dish.

Bake at 350°F for 20 to 30 minutes.
