OVER - STUFFED PATTY 
1 lb. tomato
1 1/2 lb. lean ground beef
1/2 tsp. salt
1/2 tsp. cracked black pepper
20 lg. basil leaves
3/4 c. shredded mozzarella cheese

Preheat oven to 450 degrees.

Cut 8 thin slices from tomato. Chop remaining; reserve. In medium bowl, gently toss together beef, salt and pepper. Divide mixture in half.

Place each half on sheet of wax paper; lightly pat to 8 inches round. Layer tomato slices, basil and cheese on one half. Lay second half on top. Line up edges; press together firmly to enclose filling.

Place on broiler rack. Bake 20 to 22 minutes or grill 5 to 8 minutes turning once (this is for medium rare, can cook longer for desired doneness). Garnish with chopped tomato.
