BEEFY JALAPENO CORNBREAD 
1 c. plus 1 tbsp. yellow cornmeal
1 c. milk
2 eggs
1/2 c. bacon drippings (or shortening)
3/4 tsp. salt
1/2 tsp. baking soda
1 (17 oz.) can cream style corn
1 1/2 lbs. ground beef
1 lg. onion, chopped
Shredded cheese
Jalapenos (chopped)

Combine 1 cup cornmeal, milk, eggs, salt, soda, drippings and corn in a bowl. Mix and set aside. Saute beef until lightly browned. Drain and set aside. Sprinkle remaining cornmeal in a greased 10 1/2 inch iron skillet (or baking pan). Pour 1/2 cornmeal batter in bottom of pan. Sprinkle on beef, onions, cheese. Add on jalapenos to taste. Pour remaining batter over top. Bake at 350 degrees for 50 minutes or until brown.
