EGGS FOO YOUNG 
6 eggs, well beaten
1 1/2 c. chop cooked chicken (or turkey, beef, pork)
2/3 c. finely sliced onion
1/4 c. finely chop celery
1 c. bean sprouts, drained
2 tbsp. corn oil

Combine eggs, meat, onion, celery and bean sprouts. Heat oil in large skillet or griddle; dip out 1/4 c up meat mixture and pour into skillet or griddle.

Using a broad spatula, push cooked egg up over the uncooked mixture to make a thin patty; when set, turn to brown on the other side; serve hot with HOT SOY SAUCE.

HOT SOY SAUCE:

2 tbsp. soy sauce
2 tsp. cornstarch
2 tsp. sugar
2 tsp. vinegar
1/2 tsp. salt
1 c. cold water

Bring to boiling and simmer about five (5) minutes; serve hot.
