2 tbsp. shortening 1/2 c. sugar 2 eggs, beaten 1 tbsp. grated orange rind 2 c. flour, sifted 2 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. orange juice Granulated sugar Cream shortening and sugar. Add eggs and orange rind. Set aside. Sift flour, baking powder and salt together. Add to creamed mixture alternately with orange juice; mix until well blended. Drop by small teaspoon into preheated shortening, dipping spoon into shortening each time. Fry until golden brown, turning to brown evenly. Drain. Place on absorbent toweling. Roll in granulated sugar. Makes 2 dozen. |
