VEGETABLE CASSEROLE 
1 sm. bunch broccoli
1 sm. head cauliflower
2 carrots
1 (10 3/4 oz.) can mushroom soup
1/2 soup can milk
8 oz. Swiss cheese
1/3 c. sour cream
Dash of pepper
1 can Durkee dried onions

Cut up and cook just until tender the broccoli, cauliflower and carrots; drain. Mix together soup, sour cream, pepper, 1/2 of cheese and 1/2 of onions, add vegetables and mix lightly, place in baking dish. Bake covered at 350 degrees for 30 minutes. Remove cover, sprinkle the remaining cheese and onions on top. Bake 5 minutes longer without cover. 1 (16 oz.) bag frozen vegetables can be used. Also I have used cheddar cheese or Jack cheese.
