HUSH PUPPIES 
2 1/4 c. white corn meal
3 tbsp. plain flour
1 tsp. salt
3 1/2 tsp. baking powder
2 tbsp. finely chopped onion
1 egg
1 c. milk or water

Measure corn meal into bowl. Add flour, salt, baking powder and onion. Add egg and milk; beat until smooth. Drop batter from a spoon into hot oil. Fry until brown on one side, then turn and brown on other side. Drain on absorbent napkin. Yield 16 hushpuppies.

Omit salt and baking powder if using self-rising flour.
