SAUSAGE AND PEPPERS IN TOMATO
SAUCE
 
1 to 2 tbsp. oil
3 med. red or green bell peppers
1 lb. Italian sausage
8 oz. can tomato sauce

Cut Italian sausage into 2 inch pieces. Heat the oil in skillet on medium-high heat. Add peppers and saute until tender. Remove peppers from pan and set aside. Add sausage to pan and cook over medium-high heat until browned. Drain the pan. Return peppers to pan and simmer 3 to 4 minutes. Add tomato sauce and simmer another 15 minutes. Serves 4.
