MOM'S BEEF CROQUETTES | |
Great use for leftover roast beef! 1 lb. roast beef 1 cup instant mashed potatoes (Idahoan) 2 tsp. celery salt 1/2 cup ketchup (Hunts) butter In saucepan prepare instant mashed potatoes per package instructions and leave to cool. Preheat oven to 325°F. Cut or chop up leftover roast beef. Place roast beef bits in food processor and chop until very fine. Pour chopped roast beef into medium sized mixing bowl and sprinkle with celery salt. Mix well. Add instant mashed potatoes and using hands combine ingredients. Add ketchup and continue to combine ingredients. Ketchup is used to flavor and to bind the ingredients. Roll mixture in to balls a little bit bigger than a golf ball (can make bigger if you like) and place 2-inches apart on a non-stick cookie sheet or a cookie sheet lined with parchment paper. With finger make small dimple in the top of each croquette and then put a small dollop of butter in each one. Bake at 325°F for 30 minutes or until crust begins to appear on croquettes. Remove and plate. Smother in applesauce and serve. Prep time: 20 minutes; Cook time: 30 minutes. Submitted by: G. Northam |
