TURKEY & CHICKEN CASSEROLE WITH
VEGETABLES
 
2 c. cooked turkey or chicken
3 tbsp. butter
1/2 c. diced celery
1/3 c. thinly sliced onion
3 tbsp. flour
1 1/2 c. chicken broth
2 lightly beaten egg yolks
3 tbsp. dry white wine
Minced chives
Minced nut meats
Grated cheese

Cut meat into cubes. Melt butter, stir in and saute gently until lightly browned; celery and onions. Sprinkle over the top. Stir in and cook slowly for 5 minutes; flour. Stir broth in gradually, remove the pot from the heat. Stir in egg yolks and seasoning as required and turkey meat. Stir over low heat just long enough to let the sauce thicken slightly.

You may add wine; correct the seasoning. Place the mixture in one large or in individual casseroles. Sprinkle the top with chives or parsley, nut meats or grated cheese. Serve at once over rice, spoon bread or toast.
