DAVID EYRE'S PANCAKES 
1/2 c. flour
1/2 c. milk
2 eggs, lightly beaten
Pinch of nutmeg
4 tbsp. butter
2 tbsp. confectioners' sugar
Juice of half a lemon or use frozen "Minute Maid" lemon juice

Preheat the oven to 425 degrees. In a mixing bowl combine the flour, milk, eggs and nutmeg. Beat lightly. Leave the batter a little lumpy. Melt the butter in a 12" skillet with heat proof handle. Bake 15 or 20 minutes or until the pancake is golden brown. Sprinkle with sugar and return briefly to the oven. Sprinkle with lemon juice, then serve with jelly, jam or marmalade.
