BROWN SUGAR COOKIES 
2 c. brown sugar
1/2 c. butter
2 eggs
1 1/2 tsp. baking soda
1 1/2 tsp. cream of tartar
3 1/2 c. flour

Cream the sugar and butter thoroughly. Beat in eggs, one at a time. Sift cream of tartar and soda with the flour 3 times and add to egg mixture to make a stiff dough.

Shape in long rolls and wrap in waxed paper. Chill in the refrigerator overnight. Slice thin and bake 8-12 minutes in a moderate oven, 375 degrees. Yield: 75 cookies.

Flavor may be varied by using: Different sweetenings - brown sugar, honey, maple, molasses, or fruit jams.
