TARTAR SAUCE 
1 1/2 c. mayonnaise
1 hard-cooked egg, finely chopped
2 tbsp. minced fresh parsley
2 tbsp. capers
1 tsp. chopped fresh chives
1 to 2 tsp. prepared horseradish
2 tsp. lemon juice
1 tsp. Dijon mustard
1/2 tsp. dried whole tarragon

Combine all ingredients, stirring well. Store in an airtight container in refrigerator. Yield: 2 cups.
