FLAMENCO VEAL CHOPS 
6 veal chops (or pork chops)
1 (10 oz.) can beef consomme
1 tbsp. Worcestershire sauce
1/2 c. green pepper, chopped
1/4 c. pimento, chopped (optional)
2 tsp. grated lemon rind
1/2 c. pitted black olives
1/2 c. chopped onion
2 tbsp. capers (optional)

Salt and pepper chops. Roll in flour. Brown in 1/4 cup hot oil. Add remaining ingredients. Cover skillet. Cook over low heat, until tender, about 40-45 minutes. Turn chops occasionally. Serves 6 people. Serve with green salad or Caesar salad and rice.
