BLACKBERRY PUDDING | |
1 c. sifted flour 1 tsp. baking powder 1/4 tsp. salt 1/3 c. sugar 1/3 c. milk 1 tbsp. vegetable oil 1 pt. frozen blackberries, thawed & drained 1 1/3 c. blackberry juice & water 1/3 c. sugar 1 tbsp. vegetable oil Sift flour, measure. Add baking powder, salt and 1/3 cup sugar and sift into mixing bowl. Add milk and oil; stir only until smooth. Spread evenly in greased 8 x 8 x 2 inch square baking dish. Arrange berries over top. Combine blackberry juice and water, sugar and oil; bring to a boil. Pour mixture over blackberries. Bake at once in 375 degree oven 40 minutes or until done. Makes 6 servings. |
