APPLE FRITTERS | |
1 beaten egg 1 c. finely chopped, unpeeled, cored apple 1 c. milk 1/4 c. sugar 1/4 tsp. salt 1 tsp. grated orange peel (optional) 3 tbsp. orange juice 1/2 tsp. vanilla 2 c. flour 1 tbsp. baking powder Fat for frying Sifted confectioners' sugar In mixing bowl, combine beaten egg, milk, finely chopped apples, sugar, salt, orange peel, orange juice and vanilla. Stir together flour and baking powder; fold into egg mixture, stirring just until all of the flour is moistened. Drop batter by rounded teaspoons into deep hot fat (350 degrees). Fry until deep golden brown about 3 minutes, turning once. Drain fritters on paper towels, then roll in sifted powdered sugar. Serve warm. Makes about 3 1/2 dozen. |
