KUNG PAO PORK OR CHICKEN 
3/4 lb. pork or chicken, cut into 1/2" cubes
4 tbsp. soy sauce
2 tbsp. lemon juice
2 tbsp. sugar
2 tsp. cornstarch
1/4 tsp. crushed red pepper
2 cloves garlic, minced
2 tbsp. olive oil
1 red bell pepper
1/2 sm. onion
1/4 c. unsalted peanuts

Make rice. Combine pork and 2 tablespoons soy sauce and refrigerate 30 minutes. Combine 2 tablespoons soy sauce, lemon juice, sugar, cornstarch, crushed red pepper and 1/4 cup water. Stir fry pork and garlic in hot oil 3 minutes then add bell pepper and onion. Stir fry 3 minutes. Add cornstarch mix, cook and stir until slightly thickened. Add nuts and serve over rice.
