YAMS AND PORK CHOPS 
3 lg. yams or sweet potatoes
2 lg. onions
4 lg. pork chops
1 tbsp. shortening
2 tbsp. butter
3 tbsp. brown sugar
1/4 tsp. maple flavoring
4 med. apples, cored & quartered
1/4 c. pecans, walnuts or peanuts, coarsely chopped

Peel yams and onions. Slice into 1/2 inch rounds. Trim fat from pork chops. Melt shortening in skillet and brown chops on both sides. Remove from skillet; set aside.

Melt butter in skillet with drippings. Mix brown sugar into drippings and stir until smooth. Add maple flavoring. Layer in 13 x 9 inch baking dish: pork chops, onions, yams and then apples. Pour brown sugar mixture over all and sprinkle with nuts. Cover with foil and bake at 350 degrees for 1 hour or until vegetables and chops are tender. Remove foil and bake another 15 minutes.
