SEAFOOD CASSEROLE 
2 c. chopped onions
2 3/4 c. chopped celery
1/2 tsp. salt
1/4 tsp. pepper
3/4 c. all purpose flour
1/2 c. butter
2 1/2 c. milk
2 c. grated cheddar cheese
2 3/4 lb. cooked seafoods (lobster, crab, shrimp, scallops, tuna or others)

Saute onion and celery in 1/4 cup butter until tender; stir in salt and pepper.

Melt 1/4 cup butter in a medium saucepan; add flour; slowly add milk; stir in cheese; cook and stir until cheese has melted; remove from heat.

Combine celery mixture with seafoods; turn into a large casserole; pour sauce over top.

Bake at 350 degrees for 15 to 20 minutes, or until bubbly and brown. NOTE: Recipe may be prepared in individual casseroles if preferred. Serves 6 to 8.
