SPLIT PEA SOUP 
2 c. dried split peas
3 qts. water
1 lg. ham bone
2 tsp. salt
1/2 tsp. pepper
1/4 tsp. dried oregano
1 1/2 c. onion, chopped
1 c. carrots, chopped
1/2 c. celery, chopped
4 sprigs fresh parsley

In a large pot, combine peas and water and bring to a boil. Simmer for 3 minutes and remove from heat. Cover and let stand for 1 hour. Add ham bone, salt, pepper, oregano, and onion. Cover and let simmer on low heat for 1 1/2 hours. Add carrot, celery and parsley. Simmer for another 40 minutes. Serves 4 to 6.
