POTATO PANCAKES 
2 c. grated raw potato
2 eggs, beaten
1 rounded tbsp. flour
1 tsp. salt
1/8 tsp. baking powder
1 sm. onion, grated
Cooking oil
Sour cream or applesauce

In a large bowl mix potato, eggs, flour, salt, baking powder and onion. Heat 3 tablespoons oil in large skillet at moderate heat. Spoon mixture into skillet and flatten with spoon into thin cakes. Fry on both sides until brown. Serve hot with sour cream or applesauce. Serves 4 to 6.
