PINEAPPLE BOATS 
2 fresh pineapples, save outside shell for serving
2 1/2 c. cooked & diced turkey or chicken, white meat
1 c. celery
3/4 c. mayonnaise
2 cans Mandarin oranges, drained
3 tbsp. chutney
1 tbsp. curry powder or to taste
2 bananas
3/4 c. salted peanuts
1/2 c. flaked coconut

Quarter pineapples and chunk fruit. Combine pineapples, chicken, celery. Make dressing of mayonnaise, chutney, and curry. Cover and chill 1 hour.

Drain juice from chicken mixture.

Slice bananas; add oranges, peanuts, and dressing. Toss. Add chicken mixture. Spoon onto pineapple shells for serving. Serves 8.
