CHICKEN STEW | |
1 chicken, boned, skinned, and cubed 1 tsp. salt 1 tsp. oil 1 lg. onion, chopped 1/2 c. picante sauce 1 lg. bell pepper 2-3 cloves garlic, chopped 16 oz. whole tomatoes 1 c. whole corn 1 tsp. cumin Cook chicken and half of salt in large saucepan or Dutch oven in oil, until it loses its pink color. Then add garlic and onion, cook 3 minutes. Then add remaining ingredients except the bell pepper. Bring to a boil; reduce heat, cover and simmer 5 minutes. Add bell pepper, continue to simmer 10 or 15 minutes. This is also good with chili peppers and okra. Can be cooked longer. Curtis' wife |
