PINEAPPLE GLAZED COOKIES | |
2 c. sifted flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 3/4 c. crushed pineapple 1/2 c. butter, shortening 1 c. firmly packed brown sugar 1 egg, well beaten 1 tsp. vanilla 1/4 tsp. lemon Sift flour with baking powder, soda, salt and set aside. Drain pineapple, reserve syrup. Cream shortening or butter with mixer until soft. Add brown sugar. Continue creaming mixture. Beat in egg and add pineapple and flavoring. Stir in flour mixture. Drop batter from teaspoon onto ungreased cookie sheet placing cookies 2 inches apart. Bake at 350 degrees for 18 to 20 minutes until light brown. Remove from pan and cool on paper towels. Top with Glaze: 2 tablespoons pineapple syrup, 1 cup powdered sugar, few drops red food coloring. Makes 3 1/2 dozen. |
