CHICKEN WITH WINE GRAVY 
Salt and pepper chicken and brown in 3/4 to 1 stick of butter. Put in 3 stalks of celery and 1 small onion. Cook slowly until tender. Add 3 tablespoons flour and heat until bubbly, then add 1 cup white wine and water if needed. Simmer until chicken is done. Serve over white rice.
