ZUCCHINI COOKIES 
1 c. shortening
1 1/2 c. brown sugar
2 eggs
2/3 c. shredded zucchini
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. oatmeal
1 c. nuts
1/2 tsp. almond or walnut flavoring

Cream sugar and shortening. Add eggs and zucchini. Sift flour, soda, baking powder and spices together and add. Stir in flavoring, oatmeal and nuts. Drop by teaspoons on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
