2 c. milk, scalded
2 pkgs. yeast dissolved in 1/2 c. warm water
Into a large bowl, put 1/2 stick butter, 1/4 c. sugar, 1 tablespoon salt, and 1/4 teaspoon mace. After butter is melted cool by adding 1 cup cold water. Add enough flour to make a soft dough and beat thoroughly. Add dissolved yeast and mix. Add more flour until the dough is moderately soft. Mix thoroughly. Let rise in bowl until double. Roll on floured board until 1/2 inch thick. Cut out and place on lightly floured pans. Let rise until light. Fry in hot fat (375 degrees) until brown. Drain on paper towel, and while still warm dip in glaze. XXXX sugar. Add boiling water to make thin paste. Add flavoring. Makes about 72.
