SKILLET DATE BALLS 
2 beaten eggs
1 c. granulated sugar
1 (8 oz.) pkg. chopped dates
3 c. crisp rice cereal
3/4 c. flaked coconut
1/2 c. chopped nuts

In a large skillet, stir together beaten eggs and sugar. Stir in dates. Cook and stir over medium low heat until thickened and bubbly. Cook 2 minutes more, stirring constantly. Remove from heat. Stir in rice cereal. Let cool until mixture can be handled, about 30 minutes.

Shape date mixture into 1-inch balls. (If necessary, lightly butter your hands to prevent mixture from sticking to your hands.) Roll balls in a mixture of coconut and nuts. Store in tightly covered container. Makes about 40 cookies.
